  • 2 teres major steaks 6-8 oz each
  • 2 tablespoons high-heat cooking oil avocado or grapeseed oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 cloves garlic minced
  • 2 tablespoons butter
  • 2 sprigs fresh thyme or 1 teaspoon dried
  • 1 sprig fresh rosemary or ½ teaspoon dried

  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon smoked paprika

Method
 

  1. Remove the teres major steaks from refrigeration 30 minutes before cooking. Pat dry and season with salt and pepper.
  2. Heat cast-iron skillet over medium-high heat. Add oil and swirl to coat evenly until shimmering.
  3. Sear steaks undisturbed for 4-5 minutes to develop a golden crust.
  4. Flip steaks, add butter, garlic, thyme, and rosemary. Baste continuously with melted butter.
  5. Continue cooking for 3-4 minutes until internal temperature reaches 130–135°F for medium-rare.
  6. Transfer to cutting board, tent with foil, and rest for 5-10 minutes before slicing and serving.

Notes

Teres major steak is naturally tender and requires minimal marinating. Avoid overcooking and always rest before slicing. For meal prep, cook slightly under and finish later to preserve juiciness.
