Ingredients

Salisbury Steaks
  • 1.5 pounds ground beef 80/20 blend
  • 1/2 cup fresh breadcrumbs or panko
  • 1 large egg beaten
  • 1/4 cup whole milk
  • 1 medium onion finely diced
  • 2 cloves garlic minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil for cooking
Rich Onion Gravy
  • 2 large yellow onions sliced thin
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups beef broth low-sodium preferred
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon fresh thyme or 1/2 teaspoon dried
  • salt and pepper to taste
  • 1/2 cup sliced mushrooms optional, for mushroom onion gravy

Equipment

  • Large Skillet
  • Large Mixing Bowl
  • Whisk
  • Spatula
  • Measuring Spoons

Method

  1. In a large bowl, combine ground beef, breadcrumbs, egg, milk, diced onion, garlic, Worcestershire sauce, salt, and pepper. Gently mix until just combined.
  2. Divide mixture into 6 equal portions and shape into oval patties, about 3/4-inch thick, with a slight indentation in the center.
  3. Heat olive oil in a large skillet over medium-high heat. Sear patties for 4-5 minutes per side until golden brown. Remove and set aside.
  4. In the same skillet, add butter and sliced onions. Cook for 8-10 minutes until caramelized. Add mushrooms if using and cook for 5 minutes until golden.
  5. Sprinkle flour over the onion mixture and stir for 1-2 minutes. Gradually whisk in beef broth, Worcestershire sauce, and thyme until smooth.
  6. Return patties to the skillet, nestle into the gravy, cover, and simmer on low for 15-20 minutes until internal temperature reaches 160°F.

Notes

Gently mix patties to avoid toughness. Make an indentation in patties for even cooking. Whisk flour thoroughly to prevent lumpy gravy. Store patties and gravy separately in the refrigerator for up to 3 days or freeze for up to 3 months, reheating gently with a splash of broth.
